So I am absolutely in love with the pineapple whipped cream icing from the Pig Pickin’ Cake. I have been wondering what kind of fruit to swap in for the mandarin oranges in the cake batter that would also compliment the pineapple icing. I was thinking of raspberries or blackberries.
